Put simply, you can do what you want with X-Plane. But that's when the technical stuff comes into play.
You can choose to fly online with full IFR procedures. My goals are to heavily modify my copy of X-Plane 11 to achieve the best realism possible, and so far I'd say I'm pretty far ahead of almost everyone else who is doing the same.
